Chicken Chili

A savory soup recipe for cold winter days. Healthy and easy to prepare.

1 TBL Olive Oil
1 Medium Onion, Chopped
2 tsp. Chopped Garlic
1 7oz can Diced Green Chilies
32 oz. Organic Free Range Chicken Broth
1 Cup Salsa Verde, Slightly Drained
1 Can Corn, Drained
1 Can Diced Tomatoes
1 Can Cannellini Beans, Drained (White Kidney Beans)
2 Cooked Chicken Breasts, Chopped
2 -3 TBL Chopped Fresh Cilantro
½ tsp Cumin
¼ tsp Oregano
¼ tsp Coriander Seeds
¼ tsp. Chili Powder
2 TBL Cornstarch
Salt & Pepper to Taste

In a Large Pot, saut̩ Onion and Garlic in Olive Oil for about 5 minutes. Add All Other Ingredients. Bring to a boil. Simmer and cook for at least 45 minutes Рthe longer the better. Garnish with tortilla chips and cheddar cheese. Makes 6-8 Servings.
